Bikini Friendly Protein Cookies

After a little trial and error, I came up with a delicious (and healthy) protein cookie recipe that is totally bikini friendly.  With summer just a few weeks away and many beach trips in my near future, I have been experimenting with healthy recipes that will keep me satisfied and kick my sweet tooth cravings to the curb.  And with this recipe I think I may have come up with the perfect post workout snack..

What You Will Need:

2 ripe bananas mashed until tender with a fork

2 tablespoons of peanut butter

2 tablespoons or more of your favorite dark chocolate bar (depending how much you love chocolate)

1 scoop of your protein powder or Source Organic Whey (pictured)

1 cup steel cut oats

3 tablespoons of agave nectar (if your protein powder has no flavor)

The Instructions:

If you are looking for soft and moist cookies, you will want to pre-cook your oats.  If you are looking for a crunchier/chewier texture to your cookies do not pre-cook and mix your oats in  raw.  If you do choose to pre-cook your oats, follow the instructions on your container.  Let them cool and strain any excess liquid off.

Preheat your oven to 350 degrees.  Peel the 2 bananas and mash them with the back of your fork until tender and smooth. Mix in your cup of cooked or un-cooked oats (depending on desired texture), peanut butter, agave nectar, chocolate shavings and protein powder. Stir until evenly mixed.  Spray your baking sheet with a non-stick mist to avoid your cookies sticking to your pan.  Use a large spoon and scoop 6 large scoops onto your pan evenly spaced and pat down to flatten cookie.  Shave extra chocolate on top of your cookies as a garnish if you choose.  Bake cookies for 15-20 minutes or until done. Check with a tooth pick to make sure cookies are cooked all the way through.  Let cool for a few minutes and enjoy! These are perfect for breakfast on the go or a post workout snack.
