Plan Ahead With These Easy Mason Jar Lunches

When our busy lives get the most of us, it’s hard to even think about trying to meal plan. It seems like we are always just getting back from a whirlwind trip or planning one, so it can be hard to pre-plan meals and to make sure we’re hitting our macros when we are always on the go. Meal prep can feel overwhelming and many times it’s why we opt to eat out instead of packing a lunch or eating something healthy at home.

A few years ago Michelle and I teamed up with our friend and health food blogger, Elise Museles of Kale & Chocolate to create mason jar lunches which we became obsessed with! She taught us that by just a setting aside a little time for prep work that we would save time, money and calories!! All you have to do is prep a few healthy ingredients ahead of time then just mix and match them to create your own unique salads.

Coming up with a plan for the week has definitely helped me stay on track, and these mason jar salads have been a total life saver because I actually look forward to eating them. It made lunch so easy, and I didn’t even think about eating out once. I just dumped my salad in my bowl, and I was good to go! They are perfect to pack for lunch at the office or even to store in the fridge when you need a quick dinner and have no time to cook. This is also a fun project to do with your kids, and the whole family will love eating them!

MASON JAR SALAD PREP

Prep your lunches ahead of time in cute mason jars and you are all set for your lunches for the week! Layer ingredients as they are listed from bottom to top. Only put in as much of the ingredient as you see fit, so you will have to eye this. It is key to keep the wet ingredients (such as salad dressing) at the bottom of the jar so they don’t spoil the other ingredients. When you are ready to eat, just dump your jar into a bowl and enjoy!
