Signing up for our weekly delivery from From the Farmer has been such an amazing experience. Of course it’s so nice to have fresh, local food sent directly to our door step, but it’s also a huge time saver during our busy work week. No more rushing in and out of the grocery store for fresh fruit and veggies. I always forget my shopping list when I go anyway. One of the challenges can be deciding what new creation to make with all the delicious goodies at hand. This week our box contained mushrooms, tomatoes, onions, spinach and kale. My first thought was to make one of my favorite dishes… pasta. I’ve blogged about this before too (you can click here for that recipe), but it’s fun to find new ways to eat it! We used these fresh ingredients to make a chunky sauce to top those scrumptious noodles. Handful of mushrooms, 4 large tomatoes, 1 onion, 2 cloves of garlic, handful of spinach, handful of kale This really isn’t rocket science. We chopped up the above ingredients. Boiled the noodles and then added the kale towards the end. This helped prevent us from over cooking the kale and losing its nutrients […]

We had to do it big this time since this was probably the longest I had ever gone with out devouring in my favorite dish (well….lasagna is, but close enough). Tonight, we decided to make our own sauce to make this meal extra special and it was absolutely delicious! Maybe next post we will make our own pasta and truly do it the real Italian way with homemade wine?! Who knows…stay tuned. What you will need.. Noodles: Delverge Bucantini 2lbs Ground Turkey 4 Large Tomatoes 1 Onion 1 Zucchini 1/2 Red Pepper 3 Carrots 1/4 TSP Salt & Peper 1/4 TSP Garlic Powder 1/4 TSP Red Pepper 1/4 TSP Cumin 1/4 TSP Cinnamon 1/4 Cup Greek Yogurt 2oz Sun-dried Tomatoes Basil leaves Most of the items you can find right in your cabinet and mix and subtract to your desire and liking. Begin by liquifying the tomatoes, red pepper, sun-dried tomatoes and zucchini in food processor. Move the sauce to a large pot, heat on med/high, add all spices (note: […]
