Cauliflower has been all the rage lately. It’s popping up in all your favorite dishes and snacks. But why? Since the Gluten-Free diet is on the rise, people have been looking for alternatives to eating flour-based foods and cauliflower has stepped right up! Being gluten-free myself, due to thyroid issues, I’ve been on a constant search to find substitutes that actually taste good. There are ton of products out there the promise to taste just like the real thing but in actuality, they taste more like cardboard than anything else. So in my hunt, I’ve come up with some go-to gluten-free, cauliflower full dishes that won’t even have you missing the gluten. I promise! I ordered all the ingredients shown from Peapod and they were delivered right to my door-step. Peapod has these great nutrition filters where you can search by dietary needs and more making gluten-free cooking that much easier! Use code 52Thursdays20 for $20 off your order over $75 plus free delivery for 60 days! Cauliflower Fried Rice Ingredients: 1 Bag Frozen Cauliflower Rice 1/2 cup of frozen peas and carrots 1 tablespoon of minced garlic 1/4 cup of coconut aminos 2 chicken breasts 1/4 cup diced yellow onion 2 eggs […]

Girls Who Grill Everything tastes better when its cooked on the grill. That’s a fact. So if my husband and I are cooking up a nice cut of meat, you can pretty much guarantee that we will be cooking it on the grill, no matter the season. I usually leave the grilling to my husband, he was raised on a cattle ranch, so meats and grilling are kind of his thing. But when I created this video, it was time for me to take charge, since he so graciously filmed it for me (thank’s babe!). And since I was manning the grill, that meant that Mexican would be the theme of the night and that tacos and street corn would be on the menu. We spent the weekend on the family farm, so I thought I would take over and make dinner for my family and friends that evening. First, I whipped up some guacamole for everyone to snack on while I figured out how the heck to turn the grill on. Then it was time to prep the lime jalapeño steak tacos and Mexican street corn. We finished off the meal with Grilled Chili Pineapple slices and washed it all […]

1 Crockpot Meal 3 Ways – Healthy Meal Prep Made Easy… The struggle is real when it comes to whipping healthy dinners in our house. My husband and I are usually super busy during the day that by the time we both get home at night it’s pushing 9pm and the last thing we want to do is slave over the hot stove to cook dinner. Our only saving grace has been cooking up a large crockpot meal on Sundays so that we have endless protein to work with for the entire week. Once the protein has been cooked, all you have to do is come up with different ways to prepare it each time you want a meal. With limited time on my hands, trying to stay healthy and within my macro numbers while on the #52DayShred, I came up with this Honey Siracha Chicken recipe and it has been a total winner in our house! Since the chicken is slow cooked, it has all the time in the world to soak in the delicious flavors and you would have no idea by the taste that this recipe is actually good for you! I need a little kick of […]

Health Hack: Slow Cooker Chipotle Burrito Bowls… 2016 was my year of fitness, so now that I have that dialed in, 2017 is going to be all about focusing on my nutrition. You are going to be hearing a lot about this over the next few months, so if you have perfect nutrition, then I apologize in advance for boring you with my health journey. But if you are like me and struggle to find healthy, easy, and delicious meals to make at home, then this post is for you. Most people that know me know that I LOVE Chipotle. One time I ate Chipotle 3 times in one day, I’m not even kidding. So when I saw this slow cooker burrito bowl recipe on FromThePod.com it immediately caught my attention. Something easy, healthy and that somewhat resembles a Chipotle burrito bowl? Sign me up! The best part about this recipe is that after clicking one button, all the ingredients are in your cart at Peapod.com and a day later they are on your doorstep. Didn’t even have to leave the house! It doesn’t get much easier than that! Throw all of the ingredients in the crockpot in the morning […]
