Quick & Easy Breakfast Ideas

I love shopping at Trader Joe’s because what they offer is always easy to cook and inspirational!  I wanted to share two of my favorite breakfast dishes that require just a few ingredients and very easy to make.  Perfect for hosting brunch and very presentable.  I found everything at Trader Joe’s but you can easily pick up these items at any local food market around your area.

My favorite that will win the heart of any meat lover is poached egg on top of pulled pork and corn bread. The surprisingly delightful combination of hot pulled pork and freshly baked corn bread, topped with a poached egg will have you wanting seconds, I promise!

POACHED EGG ON TOP OF PULLED PORK AND CORNBREAD

As you can see below I just purchased a box of Corn bread mix (requires Oil and water) along with already cooked pulled pork and of course eggs.  The preparation as far as if you want to make pulled pork and home-made bread is up to you.  But the combination of the three is what I am sharing! Trust me, you don’t have to be from the South to appreciate this!

CARAMELIZED ONION & TOMATO BREAKFAST PIZZA

My second favorite fun and easy breakfast dish is the infamous breakfast pizza!  Once again, all items purchased at Trader Joe’s.  This is so easy to make since the dough is already prepared.  All you have to do is decide on your toppings and bake.

I went with (from L-R) mozzarella cheese, 4 eggs, roasted tomatoes in a jar, sliced tomatoes, pancetta (or bruschetta) and onions (caramelize them first in butter over stove top).

READY TO BAKE! I garnished the top with basil leaves, salt & pepper along with thyme and rosemary for about 10 min to ensure the egg cooks.

This is such an easy and great dish to serve up for entertaining multiple guests.
